Rice Porridge with Tofu and Peas
(Serves 2)

25 g (2 tbsp) uncooked rice
25 g (1 tbsp) tofu, chopped finely
15 g (1 tbsp) peas, skin removed
500 ml (2 cups) homemade chicken stock
Method
1 Cook rice with chicken stock in a pot.
2 When rice becomes thick porridge, add peas (mash, if necessary) and simmer over low heat for 5 minutes.
3 Add the tofu before turning off the heat.
4 Cool and mash before serving.
