Chicken Stew with Vegetables
(Serves 2)

60 g (¼ cup) boneless chicken, cubed
45 g (½ whole) medium potatoes, cubed
10 g (1 tbsp) carrots, diced
15 g (1 tbsp) green peas, remove skin
15 ml (1 tbsp) vegetable oil
500 ml (2 cups) homemade vegetable
stock
5 g (1 tsp) rice flour
Method
1 Heat oil in a large saucepan over high heat. Coat the meat in the flour and brown in the pan.
2 Add the vegetable stock and cover tightly. Simmer over low heat for 20 minutes.
3 Add potatoes and carrots and green peas. Cover and simmer another 15 minutes. Purée stew in food processor to a smooth consistency.
Suggestion
1 Serve with rice porridge.
2 The chicken can be replaced with beef.
